The Easiest, Bestest Peanut Butter Cookies

I got this from a book years and years ago and it's been a holiday staple ever since. :)


1 Egg
1 cup Sugar
1 cup Peanut Butter*

Preheat oven to 350. Combine egg and sugar until well blended. Add peanut butter and mix until egg mixture is completely blended into the peanut butter. Drop by small spoonfuls about 1 to 1 1/2" apart onto ungreased cookie sheet. Press down to flatten slightly with spoon. Bake 15-25 (oven temps vary so watch the first batch carefully to judge the best time for yours -- mine actually takes 25) minutes or until bottoms are a golden brown. Remove from oven and let cool slightly to prevent breakage when removed from the cookie sheet.

When making multiple batches, adding the peanut butter a cup at a time can help make stirring easier. Sugar conscious? I cut the sugar down to 2/3 cup and they still work well.



* The best peanut butter I've found so far is JIF extra chunkie. Store brands seem to mess up the cookie for some reason. I've tried low fat as well, and it can be done, but they must really be watched in the oven.

Oh! I think I know that cookie! It was one of the first things I learned how to bake. Do you call them miracle cookies?

Don't think so, but we're talking something like 17 years ago when I found it. I just call it Peanut Butter Coookies; the family just calls them good! lol

Hm. Well, my mom found it somewhere and copied it out on a recipe card.... that was the name on the recipe card, I think (unless it was for the no-bake chocolate cookies... could be.). Anyway! That recipe has been lost for years, but now I've found it again! Not that I should've forgotten it, it's so easy. :)

Funny story, years ago my church did this charity cookbook thing, and we had a "kickoff" potluck where people brought the food from the recipes they contributed. My cousin, who was maybe ten at the time, had done this recipe.

They were very crumbly and we were complimenting them but confused. Then halfway through the dinner she goes "OH! I forgot to put in the egg!"
